Easy Caramel Frosting



1/2 cup butter or margarine
1 cup light brown sugar
1/3 cup cream or evaporated milk
2 cups confectioner's sugar
1 tsp. vanilla or 1/2 teaspoon maple extract

Melt butter.  Remove from heat.  Add brown sugar.  Stir until smooth.  Bring to boil one minute.
Remove from heat.  Add cream, return just to boiling.  Let cool, beat in confectioner's sugar. 

Use at once to frost cake.

Mary's (Aunt Berry's) Salad Dressing



2 cloves garlic (chopped)
1 cup mayonnaise
1/4 cup catsup
1/4 cup chili sauce
1 t. prepared mustard
1/2 cup oil
1 t. black pepper
dash Tabasco sauce
juice of 1 grated onion
1 T. water
1 T. Worchestershire sauce

Tea Cakes



1 cup butter
1 heaping cup sugar
2 eggs
1/2 tsp. salt
1 tsp. baking powder
3 cups all purpose flour
3 T. buttermilk
1 tsp. vanilla

Bake at 350 degrees for 8 to 13 minutes, depending on size of cakes.

Karo Pecan Pie (Aunt Jicey)



In Aunt Jicey's handwriting, I believe.


3 eggs, slightly beaten
1 cup Karo
1/8 tsp. salt
2/3 cup pecan meat
1 tsp. vanilla
1 cup sugar

Mix together all ingredients, adding nut meats last.  Pour into 9-inch pie pan lined with pie crust and bake in hot oven at 450 degrees for 10 minutes, then reduce heat to moderate (350 degrees) and continue baking until silver knife blade inserted in center of filling comes out clean.

Nan's (Tot's) Amish Cookies --- Amish Sugar Cookies







1/2 cup sugar
1/2 cup butter (1 stick)
1/2 cup powdered sugar
1/2 cup oil
2 1/4 cup plain flour
1/2 tsp. cream of tartar
1/2 tsp. soda
1/2 tsp. salt
1 egg
1/2 tsp. vanilla

Blend sugars, butter and oil.  Add eggs and beat well again.  Add vanilla.

Combine flour, cream of tartar, soda and salt.  Add to first mixture.  Mix well.

Drop small balls of dough in granulated sugar.  Put on baking sheet, flatten with fork.  Bake at 375 degrees for 10 - 12 minutes.

Makes 4 dozen.

Tot's Hummingbird Cake




3 cups all purpose flour
2 cups sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
3 eggs, beaten
1 1/2 cups oil
1 1/2 tsp. vanilla
1 (8 0z.) can crushed pineapple, drained
1 cup nuts
2 cups bananas

Mix by hand.  Combine dry ingredients, then add eggs and oil.  Stir until mixed --- add the other (ingredients).

Bake at 350 degrees for 45 minutes.

Hush Puppies


1 cup corn meal
2 tsp. baking powder
1 T. sugar
1/2 tsp. salt
1/2 cup flour
1 cup chopped onion
1 egg
3/4 cup sweet milk

Mix and drop by spoonfuls into hot oil.

Pecan Fudge


Cocoa Log


 
 

3 cups flour
2 3/4 cups sugar
1 cup sweet milk
4 eggs
2 sticks margarine
1/2 cup Crisco
1/2 tsp. baking powder
1/4 tsp. salt
1 T. vanilla
3 T. cocoa

Bake at 325 degrees for 1 hour and 10 minutes until done.  Moosey's recipe called for 1 hour and 25 minutes, but my cake was done at 1 hour and 10 minutes.

Moosey's Green Punch



1 pack lime Jello (3 oz.), dissolved in 1 1/2 cups boiling water

2 cups sugar

Stir until mixed.

Add:
1 large can unsweetened pineapple juice
1 bottle Real Lemon Juice (small size-8 oz.)
1/2 small bottle almond extract

Add enough water to make a gallon.

This is obviously a well loved recipe in our family.  We served this punch at our wedding.

Quick Custard Pie

2 cups milk
4 eggs
1 1/2 tsp. vanilla
1/2 cup Bisquick
1/2 stick margarine
3/4 cup sugar

Mix, set 5 minutes.  Bake at 350 degrees for 40 minutes.

Katherine's Cracker Jacks Popcorn

4 qts. popcorn, popped
1 cup sugar
2/3 cup margarine
2/3 cup dark corn syrup
1/2 tsp. soda
1 tsp. vanilla
2 cups nuts (1 cup peanuts and 1 cup toasted pecans)  or 2 cups pecans


Boil sugar, corn syrup, margarine.  Add soda and vanilla. 

Pour over popcorn and bake at 275 degrees for 1 hour.   After first 30 minutes, add nuts and stir.

1-2-3-4 Cake


1 cup butter or margarine

2 cups sugar

3 cups sifted Swans Down cake flour

3 teaspoons Calumet baking powder

1/2 teaspoon salt

4 eggs

1 cup milk

1 teaspoon vanilla

1/2 teaspoon almond extract


Cream butter. Gradually add sugar, creaming until light and fluffy (Beat 10 minutes on electric mixer or longer by hand).



Sift flour with baking powder and salt. Add eggs one at a time to creamed mixture, beating after each addition. Add flour mixture alternately with milk and flavorings, beating after each addition until smooth.


Pour into 3 9-inch layer pans. Bake at 350 degrees for 25 to 30 minutes. Cool in pans 10 minutes; turn out on rack.
